Puerh tea is becoming more and more popular. There are two broad categories of puerh tea: Sheng ('raw') puerh and Shou/Shu ('cooked' or 'ripe') puerh, both very different but equally delicious. With Shou puerh, the fermentation process is sped up by a special piling method, ripening the tea in a short amount of time.
