Different teas are brewed at different temperatures. But how can one determine the water temperature without a thermometer? The ancient Chinese knew how: They observed the bubbles forming in the pot. From their size and quantity, they could estimate the water's temperature. Each stage was given an amusing name, so here goes:
shrimp eye - small, fine bubbles
crab eye - slightly bigger bubbles
fish eye - large bubbles
string of pearls - large quantities of bubbles
raging torrent - boiling water
