Tea culture comes in many forms. A gaiwan (a tea bowl with lid) can be used as a brewing vessel, but can also be used to drink from it directly. The lid is then tilted to hold back any tea leaves. This type of tea drinking is popular in the old tea houses of Sichuan. The different positions of bowl and lid send different signals to the staff (and other guests). Nowadays, the gaiwan code is not so much in use anymore but a curious detail of tea culture.
