Pu'er (pu-erh) tea is becoming increasingly popular. There are two broad categories of pu'er: Sheng (\u201craw\u201d) pu'er and Shou\/Shu (\u201ccooked\u201d or \u201cripe\u201d) pu'er\u2014both very different, yet equally delicious. With Shou pu'er, the fermentation process is accelerated using a special piling method, allowing the tea to ripen in a short period of time.<\/p>\n\n\n\n
